How do I restart s whole section from the beginning?

I was unable to play wow for several months. I would like to start the whole legion leveling over. When I go back to the start of leveling guide for leveling a 100 the Zygor guide won't let me start over. Besides that wow itself thinks I have already done the quests. I hope someone can help me. Thanks

If the game is telling you that you have completed the quests they can't be reset. Just use the Intro & Artifact guide, let it skip to whatever quest you haven't done yet, and go from there.
