I set my hearth stone to Ironforge per the guide.
The guide is having my characters use the Dalaren Hearthstone and then portal to Ironforge even though I have the hearth stone set to Ironforge.

Depending on where you land in IF compared to where you land when you hearth in the Dalaran portal route might be the faster route to the end destination.

The steps that require me to purchase something from the vendor outside the bank in Ironforge are wanting me to go to Dalaran. My hearth is much, much closer (the Inn within eyeshot of the vendor.

We'll check into this to see why the travel system is suggesting that route. When you open the guide viewer settings in the Navigation section what check boxes are enabled at the bottom in the Travel System section?

Another example. I'm on step 76 of the "Feast of Winter Veil Achievements.
I just did step 74, shooting Lady Sylvanas in Undercity.
Instead of having me use my hearth stone to go directly to the commons in Ironforge which is within view of the vendor I need for step 76, the guide wanted me to use my Dalaran Hearthstone and then use the portal to Ironforge in Dalaran.
Being the obedient follower, I used my Dalaran Hearthstone, but when I saw I was going to Ironforge, I use my regular hearthstone.
