What should I do if I overleveled the guide?

Hey I ran a few dungeons currently 28 without even startin the 25-30 Guide.. And I'm not quite sure what to do now, at the 25 zone everything is grey for me, is there a way for the guide to sync with my level and catch up?

In classic, it's tough to get back in sync when you outlevel the guide like this, since quests/mobs don't scale to your level.

I would recommend opening the 25-30 guide and skipping to the step that tells you to grind to level 27 and start from there, just skipping any quests you can't accept because they're in a chain that require completing lower level quests that you skipped. You may have to grind some extra in the later grind steps, but you should eventually get back on track.
