Questing about trend quality

I have scanned daily for about a week now. How long does it take for the trend quality to become "good". The trend quality is currently "fair".

Also when I use the auction gold-guide. What does Easy/Advanced signify? What makes an item appear in one or the other? Is it based on trend quality?

You ideally want to have 2 or 3 weeks worth of scans done before using the gold guides. Right now you only have a 1 week snapshot of what pricing is like for items and that does not really give you a good historical reference to if the items are currently at a fair market value. Items can go up or down and stay like that for a week or two before going back to a more normal price. Normally you would want a month of scan data to have a really good picture of the market values.

Easy/Advanced is based more on the demand values and current pricing compared to historical pricing. Easy means you'll probably have an easier time selling it for profit and Advanced is for if there's less chance of it selling or more risk in a loss of profit.
