Your leather working guide (step 5) says to learn Coarse Leather Pauldron but the I cant learn that pattern until I reach Prof lvl 25 so I had to start with Coarse leather Armguards (least amount of mats) THEN train the Pauldron pattern at lvl 25

Did you by chance skip step 4 that tells you to create 25 Coarse Leather Armguards to reach skill 25?

I had this same problem. After gathering mats, the guide jumped right to making pauldrons. Fortunately was able to find the answer here.
