1-60 instead of every zone

Is it going to be possible to just have one that is called 1-60 where you just choose the starting area, instead of having one for each zone.

No, most people prefer to have the guides broken up into major zone changes. This makes it easier to get on track with the guide if you skip things, or if you want to try to focus on doing quests in particular zones. This was a heavily requested change, so we will not be switching it back to longer guides, sorry.
