Hi,
I am currently leveling as a fury 2H warrior, but switch sometimes to help as a tank so I have 1h and shield at times. Is there a way to quick switch the gear advisor when I do this from Fury to Protection stat weights?

It should detect the change but you can look in the Item Score section of the guide viewer settings and set it to protection or fury at will.
