They are going to be crit whores. Not only do they get a bonus to skinning speed and skill they also get a passive 1% increase in Crit rating. Combine this with the skinning profession's crit and you have a really nice crit base. I'm tempted to swap my main's mining with skinning and make him a worgen.

Before you do that you may want to wait a month for any changes to the numbers of classes. Also the class is going to play a part in what you stack or not. Nobody knows for sure yet how things will go at 85 since there has been no numbers final pass yet on the beta.I'm Rebur, Tadia, or Judianna most games.
