I purchases the Professions Guide and the only profession in it is skinning. which I already have at level 525. Where are the rest of the professions?

Same here. I was looking to get jewelcrafting and the only choice is skinning.

You have only the trial guides installed. Make sure the updater shows that you own the full version of the professions guide and hit the repair button before installing the guides.
